Hi, I've never used CAT tools and I'm wandering if it's possible to take documents that I've already translated (without using any Cat) and use them to create a TM for OmegaT.

Yes. You need to align them in an aligner which is capable of creating a TMX file. What system to you have? Windows? Linux?

You need an alignment tool, for example bitext2tmx: http://bitext2tmx.sourceforge.net/ It is free softare, the same as OmegaT (free with both meanings, "freedom" and "no cost"). It in intended to work with OmegaT end also with other CAT tools.
It is a Java application, so you can use it on Linux, Mac or Windows.

Have not used it myself, but given the quality of Wordfast, it probably matches WinAlign.
PlusTools is good for other things - right now I am using it to extract terminology from the file I am working on.

as it creates a TM in Wordfast format. You'll need Wordfast to export it to TMX, but TMX files from WF sometimes produce errors when trying to use them with OmegaT.
