conching machine

chocolate conching machine - if I understand your input correctly. If so, take it from an ex-Swiss chocolate specialist.
Note from asker:
The conching process takes places after the raw materials have already been mixed with the cocoa paste, so the 'pastera' is a different machine

I don't think your Spanish definition of "pastera" matches the definition of conching.

Conching
The processing step called ‘conching’ reduces the moistness of the cocoa mass and removes the volatile acids. At the same time, this step allows for specific aromas and smoothness to be associated with chocolate. Conching is the process where the chocolate is "plowed" back and forth through the liquid chocolate which smoothes the chocolate and rounds out the flavor, essential for the flavor, the texture and the overall quality of the chocolate.

I didn't ever mention a 'pastera' was used for conching, which I know it's a different process.
