The only term in English that I have discovered so far that includes both designs is the ‘yoke’, but this appears to be the least common name for them of all.

Both answers are correct The term ‘σταυρός πιρουνιού’ would appear to cover t-forks (which are more accurately called ‘σταυρός (ταφ) πιρουνιού’ and triple trees. I have reached this conclusion because all Internet searches I have undertaken have shown pictures of both types.

The difference between the two types in English (U.K. or U.S.) depends upon the design or shape of the connecting plate (or τιμονοπλακα in Greek). If the fork-rod connecting apertures and the point where the steering stem connects with the connecting plate are all in a straight line, the steering stem together with the connecting plate is called a ‘t-fork’ because the total assembly resembles a t-shaped crucifixion cross. However, in (correct) English, if the fork-rod connection apertures are at an angle to the point where the steering stem connects to the connecting plate, then the total assembly is (or should be) called a triple tree or triple-tree clamp, because the point where the steering stem connects to the connector plate is at the apex of a triangle and the two fork-rod connection apertures are at the left and right extremities of the triangle’s base.

Thanks, Nick. I'm not sure whether this term is interchangeable with "steering stem". The two terms (judging by a quick search) often appear together.
- but certainly "T fork" appears a lot in the context of Honda motorbikes (which is the relevant make here).

Triple Tree ("triple clamp" (US) or "yoke" (UK)) attaches the fork tubes to the frame via steering head bearings, which allow the forks to pivot from side to side, and therefore steer the motorcycle.

On the following site, σταυρός πιρουνιού is even described in Gr-English as being a ‘fork switchboard key’ or ‘steering switchboard key’:

but, when I enter any other English meaning of 'σταυρός τιμονιού' other than ‘fork triple tree or fork triple clamp or fork yoke’ into a search box and select ‘Images’, the images displayed do not match the images I obtain for similar searches for images of ‘σταυρός τιμονιού’.
