Sautéing
Almeno a Roma spadellare è "saltare in padella", per il quale ho trovato appunto sautéing.

Esiste anche come verbo e significa proprio "cuocere in padella" che non è friggere, quindi abbraccia anche "saltare" e tutto ciò che puoi fare in una padella.
