If you prefer "appointment" - I don't know if it fits here, but an "Einzelbestellung" is still an indivual order.
You could also say "individually customized order" or "customized order"....

So, are you making it "Coaching Agreement - Individual Contracts"? That might work, or you can say possibly in that case "personalized contracts"....I guess, though, that changes the action part of the word to the other party.

A custom or one-off order for a specific customer, usually of a product not carried in normal inventory. This is how one can understand.

I think the German says a little more than it really has to, and I'd suggest something like this:
"Commissioning of individual coaching (courses) in exceptional circumstances".
In which case, the courses would by definition be "individual orders", wouldn't they?
