Lobbying
Ziel: Direkte Ansprache von Fachpolitikern in kleinem Kreis mit der Möglichkeit zum persönlichen Dialog zum Thema IT-Security & Datenschutz
This is about a company approaching political foundations (Konrad-Adenauer-Stiftung, Friedrich-Ebert-Stiftung etc.) I'm leaning towards translating this as political experts. Any other suggestions?

interested politicians
Politicians should, in theory, be 'interested' in every area of policy making. In practice, they will have their own special interests in areas where they may have no 'expertise' and may not necessarily sit on any 'committee'. The phrase 'interested politicians' is used within this sort of context to mean 'politicians interested in this area of policy making'.
Numerous google references to the full phrase "interested politicians"
(Try combinations such as "with interested politicians" and "for interested politicians" to sift out all the numerous references to "self-interested politicians")

: Yep, that'll work here, although I'm sure you know that Fach-People in Germany and Austria like to think that their qualifications go somewhat beyond mere "interest". British understatement? Teutonic overkill?

Comment: "Thanks for all suggestions. In the end, decided this one was best."

specialist politician
The term is used (I have just checked google) although not very frequently. It explains what is meant by "Fachpolitiker" - but I can't help the feeling that there must be some other expression which sounds better ...

politicians on committees
i.e. politicans who have influence through the committees they sit on that deal with specific issues
Maybe there's a prettier way of saying it?

Are you sure this is not referring to "issue-based" politicians?
(relevant) political negotiators/decision-makers

politicians with a (special) area of expertise
Just my two cents worth:
"Objective: To directly address politicians with a special area of expertise in small groups with the opportunity to privately/individually discuss the subject of IT security and privacy."

I thought about 'expert politicians', too. But then again, IMO, it refers often to seniority instead of competency and/or interest, doesn't it?

politicians with the relevant expertise
Might work in your context.
Political experts are more likely IMO to be academics or journalists, rather than parliamentarians.
