ich habe die folgende Erklärung : contiser - après incision, il s’agit d’insérer un morceau d’herbe aromatique, un citron ou de la truffe dans un filet de volaille par exemple afin de l’aromatiser.

Explanation:
Nur im Kontext mit dem Einbringen von Aromagebern/-trägern

Wenn es darum geht, dass Geschmacksträger in das Protein (v. a. mageres Lamm- oder Geflügelfleisch) **eingebracht** werden, sei es mit oder quer zur Faser, kann man von 'spicken' reden. Gespickt wird gerne mit fettem Speck, aber auch mit Trüffeln, Zitrone oder Kräutern, was dann jedoch eher als Bigarrieren bezeichnet wird. Früher wurde vorwiegend mit fettem frischem (=grünem), seltener mit geräuchertem Speck gespickt, was dann passenderweise als 'Lardieren' hieß (le lard=fetter Speck).
Heute wird Fleisch eher mit Speck umwickelt, was dann wiederum 'Bardieren' heißt. Oder man nimmt Fleischschnitte und umwickelt mit diesen die Aromaträger/-geber.
