Altrimenti puoi semplicemente dire che sono sensibili al freddo.

Per quanto riguarda le tue proposte, le escluderei (ahimè) entrambe: "teneri" mi fa venire in mente una consistenza molle, mentre "delicati" mi pare troppo generico e non riferito alle temperature elevate (es. un bulbo potrebbe essere delicato perché sensibile al ristagno idrico, ai fitofagi, ecc.).
