Gewerk can be a manufacturing/production station/area within a plant, but service area seems better in contexts where the company is providing a mix of production and non-production services (like design).
Example sentence:
Mit unserem Unternehmen decken wir eine Vielzahl von technischen Gewerken im Bauwesen ab. Folgende Gewerke werden in unserem Hause abgewickelt:

Gewerke is generally used for trades, e.g. plumbers, electricians, bricklayers, masons etc., but I think categories would be more appropriate in this case.
This could then be used as categories and sub-categories in the second sentence.
